Oooey Gooey Squares

For Memorial Day I was looking in my cookbooks for a new dessert bar recipe to share with our friends.  I love get togethers as it's the perfect time for me to to try out new recipes on the willing vicitims, ah hem I mean participants.  I had checked out of the library Holly Clegg's "Trim & Terrific Freezer Friendly Meals" and found the perfect bar recipe to try.  Oooey Gooey Squares.  Just the title of the recipe was enough to catch my attention.  Sometimes we just crave something oooey gooey oh so goody!!!  I found the recipe to be very easy to make and the result was OMG worthy and my participants would most certainly agree too.  This little sweet treat recipe is definitely making it into the standard, must have, family collection.  I hope you enjoy them as much as we did!  Another great perk about these heavenly bars, you can freeze them!  That's if they last long enough to make it to the freezer!


Ooey Gooey Squares

Ingredients:
1 (18.25) oz. box yellow cake mix
1/2 cup butter, melted
1 egg
1 TBS. water
1 (8 oz.) pkg. reduced fat cream cheese
3 3/4 cups powdered sugar
2 egg whites
1 tsp. vanilla extract
1/2 cup white chocolate chips
1/2 cup semi sweet chocolate chips


  Preheat oven to 350.

In a mixing bowl, beat together the cake mix, butter, egg, and water until well mixed.  Spread the batter into the bottom of a 13x9x2 inch baking pan coated with non-stick spray.


In a mixing bowl, beat together the cream cheese, powdered sugar, egg whites, and vanilla.  Stir in the chocolate chips.  

Pour this mixture over the batter in the pan.  

Bake for 40 to 50 minutes or until the top is golden brown.


Enjoy these wonderful, addicting little treats!  Yum!!!

Table for Two Lasagna

I came across this wonderful recipe a few weeks ago.  I was looking for a lasagna that wouldn't serve a whole army and found this one.  It's delicious, easy, and warms over great!  
Ingredients:
1 cup low fat ricotta cheese
1/4 cup egg substitute
1/4 cup grated parmesan cheese
2 TBS. chopped fresh parsley
6 lasagna noodles, cooked
1 jar (14 oz.) spaghetti sauce
1 cup shredded part skim mozzarella cheese


Preheat oven 350.
Mix ricotta, egg substitute, parmesan, and parsley.
Place 2 noodles in bottom of 9x5 inch loaf pan sprayed with cooking spray, trimming noodles as necessary to fit; reserve trimmings.
Cover noodles with layers of 1/4 each of spaghetti sauce, ricottta mixture, and mozzarella. 

Repeat all layers twice.  Top with layers of the reserved noodle trimmings, remaining sauce, ricotta mixture and mozzarella.
Bake 30 minutes or until heated through.  Let stand 5 minutes before cutting to serve.
Makes 4 servings
